Publisher Note

The English Sandwich Bookmark, is an artist edition, a 12-page edition of the famous English cucumber sandwich, whose origins date back to the Victorian era in the late 19th century, when coal and labor were cheap. Cucumbers, imported from India, were grown in heated greenhouses in the Lea Valley, north of London, by Sicilian immigrants. In honor and memory of this immigration, on page 3, in the “cream cheese”—along with the traditional chives, dill, and lemon juice—you can see the tiny red dots of a Sicilian spice blend that I’ve added to the traditional recipe.
